Lemon Detox Quinoa


• 1 cup quinoa
• 1 2/3 cup water
• ½ cup parsley
• Juice of 1 lemon
• 1 crushed garlic clove, chopped
• 1 Tbsp olive oil
• ½ tsp sea salt (or to taste)


Prepare quinoa according to package directions or follow these instructions: wash, rinse and drain quinoa, and place in a 2-quart pot (or rice cooker). Add water and salt. Bring to a boil, lower heat and simmer with lid on until all water is absorbed (about 15 minutes). Don’t stir the grain while it is cooking. Test for doneness by tilting the pan to one side, making sure all of the water has been absorbed. Remove lid and let stand 5 to 10 minutes. Fluff with a fork. Combine remaining ingredients in a large bowl and slowly mix into the cooked quinoa. May be served warm or at room temperature. Excellent as a base for protein such as black beans, fish or chicken and/or add raw chopped veggies for a quinoa salad.
